Poached Eggs on Avocado and Corn Mash

Ingredients:

2 poached eggs
1/2 avocado
3 Tbsp cooked corn kernels
1/2 tomato diced
1 Tbsp freshly sqeezed lemon juice
Fresh mint leaves
salt and pepper
1 piece of seed toast

Method:

Scoop out the flesh of the avocado and mash in a small bowl.
Add the diced tomato, corn kernels, lemon juice, 1 tsp finely diced mint leaves, and salt and pepper to toast.

Bring water to boil in a shallow saucepan with 1 tbsp of vinegar added. Once water is at a rolling boil. crack the 2 eggs carefully into the water and cook until the centres are just cooked or a little runny, depending on preference. Once eggs are cooked then drain water.

While eggs are cooking, toast the bread.

Place toasted bread on a plate, top with the avocado and corn mash, add cooked eggs and garnish with some extra mint leaves.
