I talk to so many people that think of meal prepping as cooking 20 containers of rice/meat/veges, and freezing them all down for their lunch and dinner for the week.
And no i’m not saying that’s a bad idea, as for some it works really well.
BUT what i do want to tell you today, is it doesn’t have to be the ONLY way….
So what other ways are there to meal prep, that aren’t time consuming, and provide you with great nutritious meals for breakfast, lunch or dinner throughout the day.
These are my top tips:
* Cook a whole chicken on a Sunday night, shred it and leave in the fridge to use for salads and open sandwiches.
* Slice assorted vegetables and store in air tight containers to use for quick and easy salads.
* Chope celery, carrotts, capsicum, and cucumber, into vegetable sticks, and place in the fridge in an air tight container to snack on when hungry in-between meals.
* Cook a huge pot of soup for the whole family, then put the left overs into ice cream containers (enough to feed the family again), and some into single serve containers (for your lunch), and freeze for a meal later in the week. (I find this perfect as then the children can’t complain if i make them eat soup 3 days in a row lol).
* Every time you cook dinner, make an extra portion or 2, for your’s and your partners lunch the next day.
* Make a quiche that will feed the whole family for dinner, and at the same time, cook an extra one, that you can cut into slices and freeze. Pull a slice out of the freezer the night before for your lunch, then all you have to do, is make a side salad.
* Make chia seed puddings, and store in the fridge in stored glass jars. I like to add my fruit fresh on the day, but the basic chia seed pudding recipe will last for 4 days in the fridge. Clink on the link for my chia seed pudd recipe.
* One of my favorites, is chopping up fresh fruit and making fruit salad, which will last for around 3 days in the fridge. I use it on top of muesuli, or topped with unsweetened Greek yogurt and shaved almonds.
* Always have a small container of raw nuts in the car, for those emergency’s when your’e starving, to stop yourself pulling over at the closed bakery or dairy for something unhealthy!!!

This is my fav go to meal at present. 2 x paleo bread toasted with hummus, then topped with mesculin salad,sprouts, cucumber, tomato, and chicken. Quick and easy but delish!!!
I hope some of these ideas will get you thinking about how you look at meal prepping, make life just a little easier, and have you making the RIGHT food choices, PLUS get you spending more time doing the things that are important.
