Ingredients:
¼ cup chia seeds
½ cup yogurt
½ cup coconut cream
1 cup milk/rice milk or other alternative
½ tsp vanilla essence
½ cup frozen mixed berries
Add the first 5 ingredients to a medium sized jar and mix by shaking. If there are any clumps of chia seeds, then give it a quick stir. Sit the jar in the fridge overnight, and give it a quick shake if you happen to pass by.
Place the frozen berries in a separate container to defrost overnight. This allows all the juice to run from the berries and avoids the need for any added sweetness.
During the night, the chia seeds swell as they absorb the liquid. When serving it in the morning, you can add more milk if it’s too thick.
Serve in a bowl adding the defrosted berries and juice.
These can be made in advance and last up to 3 days in the fridge. Personally I love using them for breakfast as well as afternoon tea. The high protein content of the chia seeds helps to keep you feeling full through to your next meal. And they are also a hit with my kids which is a bonus.
