Chicken, Pumpkin & Chickpea salad

2 cups of diced pumpkin

2 large handfuls of spinach leaves

1 can of chickpeas, drained

2 cups of shredded chicken

½ cup of sundried tomatoes sliced

2 Tbsps whole cumin

 

Fry the pumpkin in a little oil and cumin until soft.

Place in a large bowl and add all the other ingredients.

Add 2 Tbsps of the oil from the jar of sundried tomatoes and mix well.

Season with salt and pepper.
