Fried Eggs on Basil Pesto Courgettes

Ingredients;

4 x eggs
2 x medium courgettes spiralized
2 Tbsp basil pesto
100g mushrooms quartered
1 tomato diced into 1 cm chunks
1/2 red onion finely diced
1/2 cup of packed basil leaves
1 tsp crushed garlic
1 tsp olive oil
Salt and pepper

Very lightly saute the courgettes in a small fry pan for 2 minutes, remove from the heat and stir through the pesto.
Place in the middle of 2 plates. And leave to rest while you cook the remander of the meal.

Heat oil in a medium fry pan. Add the mushrooms, tomato, red onion, basil and garlic. Saute until lightly browned, then season with some salt and pepper until desired taste is reached.

While your vegetables are cooking, crack your eggs into a lightly oiled fry pan and cook until your personal preference.

Place the vegetables around the courgettes on your plate. Then top courgettes with 2 fried eggs, and season with salt and pepper.
