¼ cup chia seeds
½ cup yogurt
½ cup coconut cream (optional)
1 cup milk/rice milk or other alternative
½ cup frozen mixed berries
½ tsp vanilla essence
Mix together the first 5 ingredients in a jar and leave to sit in the fridge overnight.
Leave the frozen berries in a separate container to defrost overnight.
The chia seeds will swell as they absorb the liquid. When you serve it in the morning, you can add more milk if it is too thick.
Serve in a bowl with the defrosted berries and juice.
These can be made in advance and last up to 3 days. I love using them for breakfast and afternoon tea, due to the high protein content of the chia seeds.
